2 cups seeded and diced ripe tomatoes
2 Tbsp. chopped fresh basil or 1 Tbsp. dried
6 cloves chopped fresh garlic
salt and pepper to taste
1 Tbsp. good quality olive oil (Optional)
Mix all ingredients and let sit for 30 minutes. Place on top of toasted small rounds of bread and enjoy with a nice glass of wine. Note: A nice touch is to add a few pieces of brie or fresh mozzarella to the mixture.
