Eggplant Parmesan Recipt

EGGPLANT PARMESAN




Peel eggplant, and slice. (about ?½ inch think).
IMPORTANT!!---Sprinkle eggplant slices with salt, and let sit on a cookie sheet for an hour or so. You?’ll see a lot of liquid forming on top, but this is important, because this draws out some of the bitterness you normally get with eggplant.
Anyway, after that, just rinse and pat dry the eggplant slices.

Dip eggplant slices in flour, then fry. (takes about 5 minutes) Drain on a paper towel.
Place eggplant slices in a baking dish, and sprinkle with Parmesan Cheese (fresh is better than the dry stuff)..Top with spaghetti sauce and mozzarella, and bake at 400 for about 12 minutes.
You can use jar or canned spaghetti sauce, but the BEST topping for this is just:
Can crushed tomatoes (you can get them with or without seasoning, garlic, etc). some Olive Oil, Oregano, Basil and Crushed Garlic.
Anyway, don?’t forget to slice and salt the Eggplant first..I?’ve made it both ways and it?’s SO much better if you take the time to do this.

also....

when I say Basil, Oregano, etc, Anything fresh is better than dried. Use fresh when you can, but when you can't, get whatever is available.
