Stacey's Favorite Chicken

4 - 6 skinless, bone-in chicken breasts
1 can cream of chicken, cream of celery or cream of mushroom soup
1/2 to 3/4 cup white wine (optional)
1 tablespoon garlic powder
salt & pepper to taste
1 small to medium onion, sliced
3 celery stalks, cut in 1'' pieces
about 10 large fresh mushrooms, sliced

Place onions, celery and mushrooms in crock pot. Arrange chicken on top of vegetables. In a small bowl combine soup, wine, garlic powder, salt and pepper. Wisk together. Pour over chicken. Cook on low 8 - 10 hours or on high 5 - 7 hours. Serve with rice or noodles. Enjoy!

My Family's Tomato Sauce

I am proud to share my recipe for sauce. This is the recipe my maternal Grandmother brought here from Sicily about 1906. Several years ago my parents visited relatives in Sicily. At dinner with cousins they found this recipe is still being used. Unfortunately it is difficult to give you measurements but I'll try. Hope you enjoy!

3 large (I believe they are 1# or so each) cans of crushed tomatoes - nothing added - although added puree is ok.

1 very large or 2 medium onions, diced
2 large cloves of garlic, minced (you can use a little more if you prefer)
1 tablespoon sugar (this cuts down the acid in the tomatoes and sweetens them if they are sour)
1 large handful fresh chopped basil or if you have to, use dried but use considerably less - maybe about 2-3 tablespoons
salt & pepper to taste

In a large pot cook onion in 2-3 tablespoons olive oil. Cook only till lightly golden. Add garlic and cook 2-3 minutes more. Add tomatoes, sugar, salt, pepper and basil. Bring to a boil then lower to a simmer. Cook only about 1/2 to 1 hour. Over cooking only removes all the nutrients in the tomatoes. If the sauce seems too thin you can simmer without a lid. Serve over pasta of your choice and sprinkle with grated Pecorino Romano or Locatelli cheese and chopped fresh basil (if available).


Edwardo's Sauce.

Combine:
1 8oz can TOM SAUCE
1 sm can TOM PASTE
1 tom paste can filled w/water
4 tsp (6 dashes) WORCESTERSHIRE SAUCE
1 tsp OREGANO
1 tsp WHOLE FENNEL
1/2 tsp GARLIC POWDER
1/2 tsp ONION POWDER
+8 grinds FENNEL
1/2 cup RED WINE

We crave pasta weekly so sometimes we have just pasta, butter & parma. Or pasta with the sauce above and other times we include meat:

Add & simmer above sauce 1-2 hrs with:
Meatballs &/or Ital Sausage

Meatballs:
1/2-3/4# GROUND BEEF
1 EGG
1/8 tsp PEPPER
1/8 tsp ONION POWDER
1/8 tsp GARLIC POWDER

Shape into m.balls & fry to brown all sides (or bake 30 min 350 deg.oven).

FEEDS: 2 Hungry Adults or 4 Regular People
